Calabrian Stuffed Cremini Mushrooms

Long before I adopted an all plant-based lifestyle, I loved mushrooms. Mushrooms are one of those vegetables I've learned through time that you either love 'em or you don't. I happen to love 'em especially their earthy + umami flavors and "meaty" textures and because they come in so many incredible varieties. 

It came as no surprise then that I would discover all the wonderful dishes - from simple to gourmet - that you can create with fresh mushrooms. Dishes like "Carnitas" style Swiss Brown Mushrooms + Portobello Stroganoff + Cremini Thai Green Curry + Shiitake mushroom fried rice and Porcini "Meatloaf" - all plant-based and all amazingly delicious mushroom featured entrees including this Calabrian Pepper stuffed Cremini Mushroom dish. 

They're a savory, slightly spicy, flavor bomb in your mouth.
